3 tablespoons of fresh lime juice
2 tablespoons of grated lime zest

Preheat the oven to moderate temperature (180°F)
Mix the sugar with the flour in a large bowl
Beat the egg yolks
Add the milk
Combine the flour mixture with the egg yolks and milk
Add the lime juice and zest, and mix well
Beat the egg whites until stiff peaks form
Foldingly add the whipped egg whites to the lime mixture
Pour the mixture into a 20 cm diameter soufflé dish
Bake in a water bath for 50 minutes
Remove from the oven, let cool, and refrigerate for 4 hours
If desired, serve with whipped cream
