Beat the egg yolks until thick and pale
Gradually add the sugar and continue beating
Soak the gelatin in fruit juices and dissolve it in boiling water; add to the egg yolk mixture along with the grated orange zest
Chill in the refrigerator until it starts to thicken
Fold in the beaten egg whites
Pour into a 2-liter mold, chill in the refrigerator for at least 4 hours or more
Unmold and garnish with orange zest
Serve chilled
