Cut the oranges into quarters
Remove the seeds
Cut into thin slices with the skin
In a large pot, combine the orange slices, carrots, water, and dried plums
Bring to a boil
Reduce heat and simmer for 10 minutes or until the carrots are cooked
Add sugar
Stir well
Bring to a boil while stirring constantly
Cook for an additional 30 minutes or until the mixture forms a thick ribbon when lifted with a metal spoon
Remove from heat
Stir and remove any foam that forms on the surface
Pour into sterilized warm jars that seal tightly and close securely
Serves 4 cups or 30 portions
