1 1/2 kg of slightly green mangoes
3 cups of water
3 cups of sugar
2 tablespoons of lime juice

Remove the stems and leaves from the mangoes, but do not peel or remove the pits
Cut the mangoes into small pieces and place them in a pot with the water
Cover and bring to a boil over high heat
Reduce heat and cook until the mangoes are very tender, about 20 minutes
Strain the mixture through a cheesecloth into a clean pot, pressing on the solids to extract as much liquid as possible
Allow the liquid to drain off, stirring the mango occasionally to allow excess liquid to escape
Use 4 cups of the liquid and mix with sugar and lime juice
Bring to a boil and cook until it reaches gelato consistency
Remove any foam from the surface and immediately pour into sterilized glass containers that are still warm
Close the containers tightly, then refrigerate for at least 1 hour before serving
Store in refrigerator for up to 3 days.
