1/2 teaspoon lemon juice

Combine the egg whites and sugar in a heatproof bowl and place it over simmering water in a bain-marie
Whisk constantly with a wooden spoon until all the sugar is dissolved
The mixture will become warm
Remove from the heat and whisk thoroughly with an electric mixer until thickened and cooled
Add the lemon juice and continue whipping until the mixture forms firm peaks
