On the previous evening, soak the bico grain in water

The next day, drain the water, cover the grains with a clean kitchen towel and roll them out using a rolling pin
Remove any skins that float to the surface

Cook the soaked bico grains in a pot of water for 40 minutes or until they're tender
Drain the cooked grains and reserve the cooking liquid

Set aside some grains for garnishing, then process the rest in a food processor
