100g diced bacon

1 cup of fresh heavy cream
100g toasted beef brain
1 tablespoon grated ginger
600g palm heart

Sauté the onion and add the bacon
Add the heavy cream and let it simmer until it reduces slightly
Set aside
In a baking dish, mix the beef brain and ginger
Bake in the oven for about 3 minutes
Wrap the palm hearts in aluminum foil and bake in a low-temperature oven until they're tender
Let it cool down and slice the palm heart
Alternate layers of palm heart and beef brain in a refrigerator
Drizzle with the sauce and bake to warm up
When serving, sprinkle more beef brain on top.
