1 2/3 cups of bread, croutons and toasted to perfection
(cup) whole milk
6 slices of integral bread, toasted
4 eggs (whites and yolks separated)
150g cream cheese or ricotta
(half cup) shredded Gouda cheese
(half cup) shredded cheddar cheese
(half cup) crumbled gorgonzola cheese
Salt to taste
1/2 teaspoon black pepper
1/2 teaspoon ground nutmeg

Warm the milk slightly and set it aside
Cut four slices of bread into triangles and cut the remaining slices into cubes
Quickly soak the bread triangles in the warm milk and line the bottom of a baking dish with them
Soak the bread cubes in the remaining milk, then drain and place them on top of the bread layer. Reserve
Beat the yolks, combine all cheeses, and season with salt, pepper, and nutmeg
Set aside
Beat the whites until fluffy and fold them into the cheese mixture. Reserve
Mix and pour over the bread
Bake in a medium-temperature oven for 30 minutes or until a toothpick comes out dry
Serve immediately.
