750g pork loin
6 slices of bacon
2 tablespoons freshly squeezed lemon juice
3 cloves of garlic, minced
oil for brushing
7 hamburger buns
7 lettuce leaves
Salt and black pepper to taste
FOR THE SAUCE
1/2 cup dried apricots (90g)
1/4 cup English mustard
2 tablespoons dark brown sugar
1 tablespoon Worcestershire sauce

FOR THE SAUCE
1/2 cup dried apricots (90g)

Process or grind the meat with the bacon in a processor or blender
Season with lemon juice, garlic, salt, and pepper
Divide the mixture into seven parts and shape into hamburgers
Brush with oil and fry in a hot skillet until well browned
Assemble each sandwich with 1 hamburger patty and 1 lettuce leaf
MAKE THE SAUCE: Blend all ingredients in a processor or blender
Distribute the sauce over each lettuce leaf or serve on the side
