1 medium-sized zucchini (200g), well-chopped
2 medium-sized potatoes (240g), peeled and coarsely grated
1/4 cup of chopped parsley leaves
1/2 teaspoon of salt
2 eggs
1 cup of whole wheat breadcrumbs (90g)
1/2 cup of grated Parmesan cheese (55g)
oil for brushing

In a medium-sized bowl, mix all the ingredients well with a wooden spoon
Divide the mixture into eight portions
On a smooth surface brushed with oil, shape each portion into a hamburger patty using an 8 cm diameter cookie cutter
Heat a large skillet or frying pan over high heat
Lightly brush it with oil and reduce the heat to medium
Fry two hamburgers at a time until they are golden brown (about 2 minutes per side)
Place them on a tray and serve immediately
