1.2 kg of clean lizard

2 ripe mangoes, peeled and cut into pieces

Cut a hole in the center of the meat and remove a marrow
Season with salt and pepper
Mix together the mango, apricots, and half the onion
Stuff the meat and close the opening with a toothpick
In a pressure cooker pan, warm the olive oil, brown the meat, add the remaining onion and cook for 2 minutes
Add the wine and complete with hot water
Cook under pressure for 30 minutes or until the meat is tender
If necessary, add more hot water
Open the pan, remove the meat and keep it warm
Dust with wheat flour in the cooking sauce and stir until thickened
Serve the sliced meat with the hot sauce.
