1 1/2 kg of lizard, cut into a piece so

Remove excess fat from the meat, wash and pat dry
Season with salt, black pepper, onion, garlic, vinegar, and bay leaf
Let it rest for 30 minutes in a flavorful broth
Make a large hole in the center of the meat with a knife, and fill with a mixture made with Parmesan cheese, ham or prosciutto, parsley, and green pepper flakes
Heat a pressure cooker pan over medium heat with olive oil and brown the meat on all sides
Add the remaining flavorful broth, any leftover filling, and tomato paste dissolved in beef broth
Cover the pan and cook for 45 minutes or until the meat is tender, adding more broth if needed
Serve the sliced meat, covered with the hot sauce reduced to a syrupy consistency
