400g of ground beef
125g of pork sausage, minced
1/2 cup of dry white wine
2 cups of chicken broth
2 tablespoons of tomato paste
250g of cooked chicken breast
salt and pepper
Make a homemade lasagna dough
Roll it out very thinly and shape into a roll
Cut into 4 to 5 cm wide slices
Cook in plenty of boiling salted water
Drain the hot water and rinse in cold water
Remove and place on absorbent paper
For the milk white sauce: melt the butter
Add the flour and mix well
Remove from heat and add milk and heavy cream at once, beating continuously
Bear until the mixture starts to thicken and bubble, then reduce heat and cook for 2 to 3 minutes
Remove from heat and season with salt
For Bolognese sauce: combine ham, onion, carrot, and parsley
Place on a plate and beat well with a knife
Melt 2 tablespoons of butter
Add the beaten mixture and cook, stirring frequently, for 10 minutes or until slightly browned
With a spatula, place the mixture in a pan
Heat the olive oil and brown the ground beef and pork sausage in a medium heat, stirring constantly
Add wine, increase heat, and let simmer until all liquid has evaporated
Add the remaining meat mixture, chicken broth, and tomato paste, and let simmer at low heat for 45 minutes, stirring occasionally
While this is cooking, melt 2 tablespoons of butter in a pan used previously and add cooked chicken breast
Cook for 3 to 4 minutes
Pierce and reserve
Add to the sauce about 10 minutes before it's ready
Check seasoning
Place a layer of Bolognese sauce at the bottom of a refractory dish greased
Cover with 1 cup of milk white sauce
Top with 1/3 of lasagna, overlapping slightly
Repeat layers, finishing with a thin layer of milk white sauce and topped with Parmesan cheese shavings
Bake in a moderate oven for 30 minutes.
