2 medium onions, sliced thinly
3 tablespoons of butter or margarine
1 tablespoon of Worcestershire sauce
3 tablespoons of all-purpose flour
2 cups of beef broth or cooking liquid from the roast
1/4 cup of dry sherry (optional)
Salt and black pepper to taste
1 cooked roast beef, sliced
Fresh parsley or chives for garnish

Caramelize the onions slowly in butter or margarine with Worcestershire sauce for 10 minutes
Add the flour and mix well
Cook for 1 minute
Add the broth and sherry (if using) and cook slowly for 10 minutes
Season to taste
Place the sliced roast beef in a baking dish
Pour the gravy over the top and bake uncovered at moderate heat (170°C) for 25 minutes
Garnish with fresh parsley or chives to serve
