4 matzot (matza crackers)
5 egg yolks
5 tablespoons of grated lime peel
juice and zest of 1/2 lime
1 cup grated coconut
1/2 cup chopped raisins or cashews

6 tablespoons of grated lime peel
zest and juice of 2 limes

Soak the matzot in water
Squeeze well to remove all liquid
Add the remaining ingredients except for the egg whites
Mix well
Beat the egg whites until fluffy and add to the mixture, mixing gently
Pour into a well-greased oven-proof dish and bake at 150°C (300°F) for about 40 minutes, or until golden brown
Serve with lime sauce made by beating the yolks with sugar and lime juice in a double boiler until thickened
Remove from heat and let cool
Serves 4-6.
