"1/2 red bell pepper, diced
1/2 cup of finely chopped onion

Blend the tomatoes in a blender
Strain and reserve
Add half of the olive oil and drain the tomatoes
Reduce heat, add oregano, parsley, thyme, and let simmer
Fry the remaining olive oil with the calabresa sausage, cilantro, red bell pepper, onion, garlic, and hot pepper
Mix well and combine with tomato sauce
Let this sauce simmer until thickened
Serve with cooked macaroni.
