2 tablespoons of sweet oregano, chopped
1 tablespoon of olive oil
150g of fresh linguine without peel
1 medium onion, chopped
2 red bell peppers, sliced into thin strips
4 medium tomatoes, peeled and diced
1/2 teaspoon of oregano
salt and black pepper to taste
500g of spiral macaroni
2 tablespoons of chopped fresh parsley
Parmesan cheese, grated
2 tablespoons of sweet oregano, chopped

Heat the olive oil in a frying pan
Mince the linguine and fry for 5 minutes
Add the onion and fry, stirring for 2 minutes
Add the sweet oregano, bell pepper, and tomato
Allow it to simmer and then reduce heat
Add the oregano and cook without covering for 12 minutes
Check the seasoning and add salt if desired
Cook the macaroni, drain and mix with sweet oregano mixture
Stir well
Sprinkle with parsley and Parmesan cheese
