Soak the gelatin in two tablespoons of water and dissolve it in a warm water bath
Combine all ingredients and refrigerate until slightly thickened
Beat with an electric mixer until firm
Refrigerate until firm, then beat again
Refrigerate until needed, stirring vigorously just before serving by adding more skim milk or lemon juice to taste
Serves 1 cup at approximately 5 calories per tablespoon
