Boil the peeled sweet potatoes in salted water until tender
Let them cool down
Grate the sweet potatoes using a meat grinder or a box grater, along with the medium-sized sweet potato and small onion
In the serving bowl, mix together the grated sweet potatoes, mayonnaise (or to taste), salsa and chive (if using), gently folding until well combined but not mashed
Be careful when cooking the sweet potatoes so they don't break apart.
