Soak the onion in water
Chop the onions finely
Fry in butter or margarine until softened, Squeeze out excess moisture from the onion
Mix with ground beef, eggs, and onions
Season with salt, black pepper, lime rind, and oregano
Shape into small balls with moist hands
Leave to rest for a bit
Fry both sides in hot olive oil until golden brown
Drain on paper towels
Serve skewered on toothpicks
Best served after 3-4 days.
