3 1/3 cups all-purpose flour
3 packets of active dry yeast (fresh)
3/4 cup warm milk
1/3 cup granulated sugar
5 large eggs
4 tablespoons unsalted butter or margarine, melted
1 tablespoon grated lemon zest
1/2 teaspoon salt
1 1/2 cups diced rhubarb
Vegetable oil for frying
1/2 cup confectioner's sugar to dust

Place the flour in a large bowl and make a well in the center, then crumble in the yeast
Add a little milk and 1 tablespoon of granulated sugar
Add a little more flour that is around the edge and form a soft dough
Let it rest in a protected place for 15 minutes
Add the remaining milk, granulated sugar, eggs, melted butter or margarine, grated lemon zest, and salt
Mix well and knead on a floured surface until a ball forms
Place the dough back in the bowl, cover, and let it rise in a protected place for 30 minutes
Reduce the dough and form balls of about 2 cm in diameter, filling each with diced rhubarb
Let the mini-dreams rise again for 15 minutes
Fry them in hot vegetable oil, turning occasionally until golden brown
Drain on paper towels
Dust with confectioner's sugar
