1 cup of pineapple juice
1 cup of chopped fresh pineapple, drained from juice
2 tablespoons of olive oil
1 tablespoon of vinegar
2 slices of fresh ginger
salt and black pepper to taste
1 green bell pepper, seeded and sliced into strips
1 red bell pepper, seeded and sliced into strips
1 tablespoon of soy sauce
2 tablespoons of cornstarch
2 cups of cold water
1 cup of pineapple juice
1 cup of chopped fresh pineapple, drained from juice

Mix the ingredients, except for the pineapple juice, with the cornstarch and water
Heat it over medium heat and let it simmer for 3 minutes
Add the pineapple juice
Mix until a thick paste forms
Add to the hot mixture and cook until thickened (5 minutes)
Serve immediately
