1 cup boiling water
1 tablespoon vanilla extract
1/4 cup chopped walnuts or hazelnuts

Whisk together the eggs, almonds, and coffee in a saucepan
Add the boiling water slowly, whisking continuously
Cook over low heat, stirring occasionally, until thickened
Remove from heat, add vanilla extract and chopped nuts, whisking well
Serve warm or chilled with ice cream and puddings
Yield: 1 3/4 cups
