Fry the onion in butter until it starts to brown
Add the mushrooms and cook for 1 minute
Add the wine and cook at high heat for about 2 minutes
Gradually add the flour, stirring well
Remove from heat, add chicken broth and mustard
Continue stirring
Taste and adjust seasoning as needed
Return to heat and simmer until thickened
Serve in 8 portions.
