1 tablespoon of Cornstarch

1 cup of boiling Water
1 tablespoon of grated Lemon Peel
1/4 cup of freshly squeezed Lemon Juice
1 tablespoon of Butter or Margarine
1 tablespoon of Cornstarch

Combine the Cornstarch and Sugar in a small saucepan
Gradually add the boiling water, stirring constantly
Cook over medium heat, stirring always, until the mixture becomes transparent and thick, about 4-5 minutes
Remove from heat, then add the grated Lemon Peel, freshly squeezed Lemon Juice, and Butter or Margarine, stirring well
Keep warm until serving
This sauce is recommended for fruit puddings, fruit cakes, and simple breads
Yields 1 cup.
