In a small saucepan, melt the butter over high heat
Add the onion and cook until it's lightly browned
Add the wine and let it simmer until it reduces to about half (about 10 minutes)
Combine the mustard and heavy cream, stirring occasionally, until it thickens slightly (about 10 minutes)
Season with salt and pepper
