In a large pot filled with plenty of boiling water, cook the tomatoes for 1 minute or until the skin starts to peel
Drain, let it cool slightly, and remove the skin
Halve the tomatoes, remove the seeds, and cut into pieces. Reserve
In another pot, heat the olive oil and sauté the garlic, onion, carrot, and salt for 2 minutes or until golden brown
Add the tomato and season with salt and black pepper to taste
Let it cook until it's very tender
Remove from heat and discard the garlic cloves
Reserve the basic tomato sauce until the time to assemble the pizzas
If desired, freeze in airtight plastic or glass containers for up to 6 months
