At times, the sauce will start to thicken
The consistency should not be too thick
Add, then, little by little, and mixing always, the remaining butter in small pieces; it should be arranged on a plate
Once the sauce doesn't thicken, the rest of the operation is easy
It's important to stir without stopping regularly

Serve with baked fish or stewed fish, cauliflower, oysters, or crustaceans.
