2 cups of fine white sauce
3 egg yolks
1/2 cup of grated cheddar cheese
2 cups of fine white sauce

Prepare the white sauce (recipe to follow)
When still warm, add the egg yolks, beating well after each addition
Immediately add the grated cheese and mix carefully with a spoon
Do not use a blender for this operation as the cheese will form strings when melted
This sauce can be used with roasted potatoes, cauliflower, eggs, seafood, etc
Yield: 3 cups
