Crack the egg into a large bowl
Whisk lightly with a fork
Add the yogurt, oil, and honey
Mix well
Combine the baking soda and flour
Mix well
Grease 6 to 8 muffin tins
Fill each tin about 2/3 full
Bake in a moderate preheated oven (170°F) for 25-30 minutes or until lightly browned
Cool and serve
