3/4 cup of sugar
2 tablespoons of unflavored gelatin
4 large egg yolks, separated
2/3 cup of water
1/3 cup of lime juice
1 tablespoon of grated lime zest

In a saucepan, combine 1/2 cup of sugar and the gelatin
Mix the egg yolks with the water, lime juice, and sugar until well combined
Add the mixture to the saucepan and cook over medium heat, stirring constantly, until it reaches a simmer
Remove from heat and stir in the grated lime zest
Let cool slightly before refrigerating for at least 3 hours or until firm
If desired, garnish with whipped cream
Serves 6-8 people
Variations:
1 - Substitute the water and lime juice with 3/4 cup of passionfruit puree and 3/4 cup of lime juice
2 - Substitute the egg yolks with 1 cup of mango puree and 1 tablespoon of lime juice
3 - Substitute the liquid with 1 cup of damson fruit, previously heated in water and blended for 10 minutes with 1/2 cup of boiling water
4 - Substitute the liquid with 1/2 cup of black plums, without pits, blended with 1/2 cup of water.
