2 cups of passion fruit puree
1 cup of sugar
1 tablespoon of vanilla sugar
1 pinch of salt
4 eggs
3 sheets of unflavored gelatin
3 cups of ricotta cheese strained through a fine-mesh sieve
1/2 cup of heavy cream
Sauce
2 tablespoons of sugar
3 cups of strawberries
2 cups of passion fruit puree
1 cup of sugar

Heat the passion fruit in a non-stick skillet and reserve
Mix together the sugar, vanilla sugar, salt, and eggs in a saucepan
Place the mixture over simmering water and whisk constantly until it's smooth and foamy
Remove from heat and add hydrated gelatin according to the manufacturer's instructions
Fold in the ricotta cheese and passion fruit, mixing well and adding the whipped cream
Portion into individual servings and refrigerate for at least 3 hours
Sauce
Prepare a caramel with sugar and combine with mashed strawberries
Cook until the caramel dissolves
Serve the mousse with strawberry sauce on top.
