8 ripe bananas

2 tablespoons unsalted butter

Peel the bananas and wrap them in plastic film
Place them in a saucepan and cover with cold water
Bring to a simmer and cook, covered, for 15 minutes or until the banana is tender
Drain the banana and unwrap it
Remove the peel and any thick fibers and mash the banana with a fork
Add warm milk, heavy cream without the whey, and butter
Mix well until smooth and season with salt and black pepper
Stir constantly and transfer to a saucepan
Simmer over low heat for 5 minutes
Serve immediately.
