In a stand mixer, whip the egg whites until snowy. Reserve
In a small saucepan, combine the sugar and water over medium heat, stirring to dissolve the sugar
Let it cook without stirring until it reaches the firm ball stage
(Place some warm syrup in a bowl with cold water
If you can shape it into a ball that holds its form, it's done.)
With the mixer still running, slowly add the syrup to the egg whites and continue whipping until stiff peaks form
Place in a large serving dish or individual servings, top with orange segments and sprinkle with shredded coconut
Refrigerate for about 2 hours before serving
