Separate the whites from the yolks, leaving each yolk in its shell until time to use
Season the whites with salt and pepper and beat them well
Place on toast, piling slightly
Make a depression in the center of each mound of white and place the yolk there
Bake in a moderate oven until the white is golden and the yolk is firm
