2 eggs
1 onion
1/2 tablespoon butter or margarine
1/2 tablespoon all-purpose flour
1/2 cup water
1 teaspoon curry powder
salt and pepper to taste
3 tablespoons heavy cream
Mango Chutney (optional, comes in jars)
1 banana
1 can of peas
1/2 teaspoon chopped pecan (comes ready)

Cook the eggs for 10 minutes, starting from when the water boils
Cube the onion and fry it in butter or margarine
Mix in the flour and stir well
Add the water and cook while stirring for a few minutes
Season with salt, pepper, and curry powder to taste
Add the heavy cream and 1 tablespoon Mango Chutney
Add a sliced banana and 1/2 can of peas
Aquenent
Cut each egg into 4 pieces and add to the sauce
Dust with pecan
Serve with rice.
