1 cured ham, about 1 kg
a finely chopped onion
two spoons of finely chopped parsley
two thin slices of carrot
2 green pepper slices
a tomato, peeled and seeded
one cup of pineapple juice
1 1/2 teaspoons of sesame oil
3 tablespoons of dark brown sugar
a pinch of grated ginger
2 tablespoons of white vinegar
1 rounded teaspoon of cornstarch dissolved in half a cup of water

In a skillet, quickly fry the entire ham in the sesame oil until golden brown
Remove it and set it aside
In the same skillet, over medium heat, sauté the onion and parsley first, then add the vinegar, tomato, and sugar
Let it simmer for a bit, then add the carrot and pepper slices, pineapple juice, ginger, salt, and pepper
Simmer for 10 minutes over low heat, covered
Thicken the glaze with the cornstarch mixture, then add the ham and let it cook for another 5 minutes to absorb the flavors
Serve hot with rice, garnished with pineapple slices
