4 tablespoons of butter or margarine
1 tablespoon of flour

Wash the spinach, cook it without water, with 1 small spoonful of salt (the vegetable will form a liquid )
When cooked, drain and chop over a plate of meat
Heat the butter or margarine in a pan, add the flour
When it forms a paste, add the milk and chopped spinach
Let it simmer on low heat
Taste and season with salt and pepper
Line the bottom of a Pyrex or aluminum baking dish with the spinach cream
Break the eggs around the dish
Cover with white cheese sauce (recipe below), sprinkle with grated cheese, and bake in a hot oven (220°C) for 10 to 15 minutes, until it forms a golden crust
Serve warm for 6 people.
