Prepare the cream in a medium saucepan
Mix the pudding mix, sugar, and egg yolks
Add milk gradually, stirring well
Add grated orange peel
Cook over medium heat, stirring constantly until it starts to simmer
Pour into a large serving dish with a rim, cover the surface of the cream directly with plastic wrap, let cool, and refrigerate
Prepare the meringue: preheat oven to medium (180°C) (moderate)
Invert a 20cm diameter mold and lightly grease the bottom
Beat egg whites in a small bowl at room temperature, high speed, until frothy
Add sugar gradually, 2 tablespoons at a time, beating well
Beat until stiff peaks form when lifting the beaters
Place meringue on the mold's rim, then shape into an spiral using a spatula
Bake for 10 minutes or until golden brown
Let cool slightly and release meringue with a spatula
Remove cream from refrigerator and remove wrap
Allow meringue to slide onto the cream
Garnish with orange around the meringue and dust with grated orange peel strips
Serve chilled, 6 servings.
