1 basic whipped cream recipe
1 1/2 cups guava jelly
1/4 cup Cointreau liqueur (or other orange-flavored liqueur)
3 large egg whites
1/3 cup granulated sugar
3 tablespoons grated ginger
4 cups water
1/4 cup toasted almonds, chopped

Prepare four serving plates by spreading the whipped cream and reserving
Mix the guava jelly with the Cointreau liqueur until a smooth sauce forms
Set aside
Distribute the sauce over the whipped cream and reserve
In a stand mixer, beat the egg whites until they form stiff peaks
Gradually add the sugar while continuing to beat, until stiff peaks form
Set aside. Reserve
Heat 4 cups of water in a large skillet over medium heat, without allowing it to boil
Reduce the heat and use a large spoon to gradually pour the beaten egg whites into the hot water, stirring constantly
Cook for 4 minutes, turning occasionally, or until the eggs are cooked through
Remove from heat and let stand for an additional 3 minutes or until firm
Use a skimmer to remove the snowy eggs and place them over the guava sauce
Distribute toasted almonds and serve.
