300 g of shrimp

Hydration: Soak 200 g of rice noodles*
Drain and reserve
Mix fish sauce*, ketchup, ginger, water, and reserve
In a wok (or large skillet) with cooking oil, sauté 1 minced garlic
Add 2 eggs and stir-fry
Add a handful of bok choy, chopped scallion, ground peanuts, and shrimp
Stir-fry for a few minutes
Stir-fry until the shrimp change color, then add the reserved sauce and rice noodles
Stir-fry and turn off heat.
