Peel the sweet potato and grate it coarsely (should yield 2 cups)
Also grate the onion, place it in a cloth or paper towel and squeeze well to remove excess moisture
Place it in a bowl and mix well to distribute the onion
Mix together the eggs, flour, salt, and black pepper
Mix well
Add the sweet potato and mix well
Heat the olive oil in a frying pan
Let the sweet potato mixture fall into spoonfuls on the olive oil, press lightly and fry for about 1 minute on each side
Yield 12 pancakes
Serve to accompany roasted meats or game.
