Using a knife, remove the top layer of each puff pastry square, shaping it like a basket
Remove some of the dough and gently dip each puff pastry square in milk
Let them drain and arrange them on an oiled platter with butter, not too close together
A few minutes before serving, brush the outside of each puff pastry square with melted butter, place a small pat of butter at the bottom of the cavity and break an egg
Season the egg with salt and place it on top with another small pat of butter
Cover with a generous layer of grated Parmesan cheese
Place the platter in a hot oven until the eggs start to set, then remove and serve immediately.
