1 packet of yeast for bread
2 cups of warm water
2 tablespoons (level) of sugar, 2 teaspoons of salt, and 1 tablespoon of melted butter or margarine
1 cup of grated cheddar cheese
1 cup of ricotta cheese
5 cups of all-purpose flour
1 egg beaten lightly for brushing the puffs

Preheat the oven to 400°F (quente)
Combine yeast and sugar in warm water
Add salt, melted butter or margarine, grated cheese, and ricotta to the mixture
Gradually add flour, cup by cup, until a smooth dough forms
Knead on a floured surface until the dough is smooth
Shape into a ball and place in a greased bowl, cover with plastic wrap, let rise for 1 hour
Knead again for a few minutes
Divide into 30 equal portions
Shape each portion into a log about 12 inches long and cross the ends in the middle
Place on baking sheets lined with parchment paper, cover with plastic wrap
Let rise for 25 minutes
Brush with beaten egg and bake at 400°F (quente) for 25-30 minutes or until lightly golden
Make about 30 puffs.
