Grease the molds well with butter, for 6 mini quiches
Beat the egg yolks until they become creamy
Divide the egg yolks among the 6 molds
Place in a moderate oven (170°F) preheated for 10 minutes
Meanwhile, mix the sugar with the orange juice, water, and lime juice in a 20 cm diameter pan and stir until the sugar is dissolved and the mixture starts to simmer
Let it simmer on low heat while the eggs are in the oven
Unmold the eggs over the sauce in the pan and cook for 2 minutes, occasionally spooning some of the sauce over each portion
Refrigerate overnight and serve, drizzling each individual portion with the sauce
Serve 6 portions.
