Using a food processor or blender, puree the olives, walnuts, garlic, and parsley
Without stopping the machine, slowly add the olive oil
Add the Parmesan cheese and process until well combined
Serve with crackers or savory biscuits
Yields 1 cup of tapenade
If desired, use as pasta sauce for macaroni, adding 3/4 cup of water to the cooking liquid
Sufficient for 1/2 kg of pasta.
