1 jar of stuffed green olives (220g)

1 jar of stuffed green olives (220g)
Place the ricotta and Provolone cheese in a large bowl and beat until well mixed
Add paprika sufficient to temper and achieve a pinkish color
If desired, add salt
Shape into a pumpkin-like form
Cut the green olives into slices and arrange them on top of the cheese in diagonal lines
Use a sharp knife or skewer to make cuts between the olives
To serve, place fresh palm leaves on top and serve with salted crackers
Serves 40 portions.
