2 chicken breasts, cut in half without bone or skin
salt and black pepper to taste
4 tablespoons of butter or margarine
2 tablespoons of finely chopped onion
1 cup of orange juice
4 tablespoons of whiskey
1 tablespoon of English sauce
1 tablespoon of cornstarch
optional: orange zest and thyme for garnish

Season the chicken breasts with salt and black pepper
Coat the chicken breasts in melted butter
Arrange them on a baking dish and bake in the oven for about 20 minutes, or until cooked through
Remove from the oven and place the chicken breasts on a serving platter
Strain the pan drippings into a saucepan and add the onion, orange juice, whiskey, English sauce, and cornstarch dissolved in a little of the juice
Simmer over low heat, stirring constantly, until slightly thickened
Season with salt to taste
Serve over the chicken breasts on the platter
Garnish with orange zest and thyme, if desired
