Ask the fishmonger to clean the fish along its sides, removing the spine
Place the fish on a double sheet of aluminum foil larger than it
Put it in a baking dish and lift the foil over the fish
In a small pan, melt the butter, fry the mushrooms and green onions for about 5 minutes
Add soy sauce, cornstarch, and ginger
Mix the cornflour with water and add it
Cook while stirring until thickened
Check if you need more salt
Spread a little of the seasoning inside the fish and the rest outside
Cover the mold with aluminum foil, closing well
Bake in a hot oven (200°C) for about 40 minutes
