0.5 kg of fish fillets
4 tablespoons of vinegar
2 tablespoons of olive oil
0.5 tablespoon of grated orange zest
2 tablespoons of orange juice
2 tablespoons of finely chopped onion
2 sprigs of rosemary
1 clove of garlic, minced
to taste with salt and black pepper
1 orange cut into thin slices
0.5 kg of fish fillets

Place the fish fillets in a frying pan
Add boiling water sufficient to cover them
Cover and cook slowly for 5 minutes or until the fish is cooked
Drain the fish
Arrange in a shallow refrigerator dish
Mix together the vinegar, olive oil, orange zest, juice, onion, rosemary, and garlic
Season with salt and black pepper to taste
Pour over the fish
Cover and refrigerate for one day before serving
Drain the liquid and garnish with orange slices
Serves 4-5 people.
